Ingredients

- 2 cups kefir or plain yogurt
- Olive oil
- Herbs (e.g., za’atar, sumac)
- Chili flakes (optional)
- Black pepper (to taste)
Instructions
- Strain the kefir or plain yogurt in a muslin cloth or clean tea towel for 24 hours.
- Once strained, scoop the thick cheese into a bowl.
- Roll the cheese into small balls.
- Place the balls in olive oil and add herbs or chili flakes as desired.
- Store in an airtight jar in the fridge for up to a week.
