Description

Tangy, creamy, and totally spreadable cheese made from kefir or strained yogurt, perfect for a mezze spread.


Ingredients

Scale
  • 2 cups kefir or plain yogurt
  • Olive oil
  • Herbs (e.g., za’atar, sumac)
  • Chili flakes (optional)
  • Black pepper (to taste)

Instructions

  1. Strain the kefir or plain yogurt in a muslin cloth or clean tea towel for 24 hours.
  2. Once strained, scoop the thick cheese into a bowl.
  3. Roll the cheese into small balls.
  4. Place the balls in olive oil and add herbs or chili flakes as desired.
  5. Store in an airtight jar in the fridge for up to a week.
