Instructions
- In a bowl, mix together the flour, sugar, salt, baking soda, and baking powder.
- In another bowl, whisk the egg, kefir, and yogurt together.
- Combine the wet ingredients with the dry ingredients until just mixed; lumps are fine.
- Let the batter rest for about 5 minutes.
- Heat a skillet over medium-low heat and add a pat of butter.
- Pour in the batter and cook until bubbles form, then flip and cook until golden brown.
- Serve hot with your favorite toppings.
Notes
For best results, use room temperature ingredients and avoid overmixing the batter. Leftovers can be frozen for easy reheating.
