Description

A simple guide to making delicious milk kefir at home using just milk and kefir grains.


Ingredients

Scale
  • 2 cups fresh milk (whole milk recommended)
  • 12 tablespoons milk kefir grains

Instructions

  1. Put 1-2 tablespoons of milk kefir grains in a clean jar.
  2. Pour 2 cups of fresh milk over the grains.
  3. Cover the jar with a coffee filter or clean cloth secured with a rubber band.
  4. Let it sit in a warm, shady spot for about 24 hours.
  5. Check the kefir occasionally until it thickens and smells tart.
  6. Once ready, pour the kefir through a plastic strainer to separate the grains.
  7. Use the liquid kefir as a drink or in recipes.

Notes

Start with small batches to get the fermentation timing right. Experiment with different types of milk and toppings for serving.
