Ingredients

- 1 napa cabbage (or green cabbage)
- 1 daikon radish
- 2–3 green onions
- 4 cloves garlic, minced
- 1 inch ginger, grated
- 2–3 tablespoons chili flakes (to taste)
- 2 tablespoons fish sauce (optional)
- 1–2 tablespoons sea salt
- 1 apple or pear (optional, for sweetness)
Instructions
- Soak chopped napa cabbage in salty water until softened.
- Drain the cabbage (do not rinse).
- Mix in grated ginger, minced garlic, and daikon radish.
- Add chili flakes and mix by hand (wear gloves if desired).
- Pack the mixture tightly into a clean jar, ensuring there’s a bit of brine over the mix.
- Leave the jar at room temperature for a few days, checking for bubbles and aroma.
- Once fermented to your liking, store in the fridge.
Notes
Customize your kimchi by adding carrots or using your favorite hot sauce instead of chili flakes.
