- 2 cups chopped rhubarb
- 1 cup plain unsweetened kefir
- 1 cup brown sugar
- 1/2 cup vegetable oil
- 2 large eggs
- 2 cups all-purpose flour
- 1 teaspoon baking soda

- 1 teaspoon vanilla extract
- Optional: 1 teaspoon cinnamon, 1/2 cup chopped walnuts or pecans
Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, mix together the kefir, brown sugar, vegetable oil, eggs, and vanilla extract until well combined.
- In another bowl, whisk together the flour, baking soda, salt, and cinnamon (if using).
- Gradually fold the dry ingredients into the wet ingredients until just combined.
- Gently fold in the chopped rhubarb and nuts (if using).
- Pour the batter into a greased loaf pan and smooth the top.
- Bake for 50-60 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs.
- Allow the bread to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
Notes
Be cautious not to overmix the batter to ensure a light texture. For added flavor, experiment with spices and toppings such as a cinnamon streusel or vanilla bean glaze.
