Description

A moist and gut-friendly Rhubarb Bread infused with the tangy goodness of kefir, creating a delightful sweet and tart flavor combination.


Ingredients

  • 2 cups chopped rhubarb
  • 1 cup plain unsweetened kefir
  • 1 cup brown sugar
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract
  • Optional: 1 teaspoon cinnamon, 1/2 cup chopped walnuts or pecans

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, mix together the kefir, brown sugar, vegetable oil, eggs, and vanilla extract until well combined.
  3. In another bowl, whisk together the flour, baking soda, salt, and cinnamon (if using).
  4. Gradually fold the dry ingredients into the wet ingredients until just combined.
  5. Gently fold in the chopped rhubarb and nuts (if using).
  6. Pour the batter into a greased loaf pan and smooth the top.
  7. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs.
  8. Allow the bread to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
