Description

A vibrant and tangy bread that combines the tartness of rhubarb with the creaminess of Greek yogurt, perfect for breakfast or as a sweet treat.


Ingredients

  • 2 cups all-purpose flour
  • 1 cup Greek yogurt
  • 1 cup rhubarb, chopped
  • 3/4 cup sugar
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 1 tsp vanilla extract
  • 1 tsp cinnamon (optional)
  • 1/2 cup nuts, chopped (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, mix together the flour, sugar, baking soda, and salt.
  3. In another bowl, whisk together the yogurt, eggs, oil, and vanilla.
  4. Combine the wet and dry ingredients and fold in the rhubarb and nuts if using.
  5. Pour the batter into a greased loaf pan.
  6. Bake for 50-60 minutes or until a toothpick comes out clean.
  7. Let cool before slicing.

Notes

For a crunchy topping, sprinkle coarse sugar on top before baking.
