- 2 cups all-purpose flour
- 1 cup Greek yogurt
- 1 cup rhubarb, chopped
- 3/4 cup sugar
- 1/2 cup vegetable oil
- 2 large eggs
- 1 tsp baking soda
- 1/4 tsp salt
- 1 tsp vanilla extract
- 1 tsp cinnamon (optional)
- 1/2 cup nuts, chopped (optional)
Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, mix together the flour, sugar, baking soda, and salt.
- In another bowl, whisk together the yogurt, eggs, oil, and vanilla.
- Combine the wet and dry ingredients and fold in the rhubarb and nuts if using.
- Pour the batter into a greased loaf pan.
- Bake for 50-60 minutes or until a toothpick comes out clean.
- Let cool before slicing.
Notes
For a crunchy topping, sprinkle coarse sugar on top before baking.
