Description

These vibrant, tender kefir Soft and Chewy Pistachio Pudding Cookies combine the unique tang of kefir with the nutty flavor of pistachio pudding mix for a delightful treat!


Ingredients

  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 cup plain whole milk kefir
  • 1 package instant pistachio pudding mix
  • 1/2 cup chopped pistachios

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Cream together the butter, granulated sugar, and brown sugar until light and fluffy.
  3. Add the eggs one at a time, mixing well after each addition, followed by the vanilla extract and kefir.
  4. In a separate bowl, whisk together the flour, baking soda, salt, and pistachio pudding mix.
  5. Gradually mix the dry ingredients into the wet ingredients until just combined. Be careful not to overmix.
  6. Fold in the chopped pistachios.
  7. Chill the dough for at least 30 minutes.
  8. Scoop uniform balls of dough onto a baking sheet and bake for 10-12 minutes, or until the edges are lightly golden and the centers are still soft.
  9. Allow to cool on the baking sheet for a few minutes before transferring to a wire rack.

Notes

For extra holiday flair, consider adding green food coloring to the dough or topping the cookies with a white chocolate drizzle.
