- 2 cups all-purpose flour
- 1 tsp baking soda
- 1/2 tsp salt
- 1/2 cup unsalted butter, softened
- 1/2 cup granulated sugar
- 1/2 cup brown sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1 cup plain whole milk kefir
- 1 package instant pistachio pudding mix
- 1/2 cup chopped pistachios
Instructions
- Preheat the oven to 350°F (175°C).
- Cream together the butter, granulated sugar, and brown sugar until light and fluffy.
- Add the eggs one at a time, mixing well after each addition, followed by the vanilla extract and kefir.
- In a separate bowl, whisk together the flour, baking soda, salt, and pistachio pudding mix.
- Gradually mix the dry ingredients into the wet ingredients until just combined. Be careful not to overmix.
- Fold in the chopped pistachios.
- Chill the dough for at least 30 minutes.
- Scoop uniform balls of dough onto a baking sheet and bake for 10-12 minutes, or until the edges are lightly golden and the centers are still soft.
- Allow to cool on the baking sheet for a few minutes before transferring to a wire rack.
