- 2–3 organic, unwaxed lemons (preferably Meyer lemons)
- 1/4 cup sea salt
- 1 tablespoon kefir whey (optional)
- Water (as needed)
Instructions
- Wash and slice the lemons into quarters, ensuring to keep the rinds intact.
- In a clean jar, layer the lemon slices with salt, packing them tightly.
- Add kefir whey if using, and enough water to ensure the lemons are submerged in their juices.
- Seal the jar and store it in a cool, dark place for 2-4 weeks, checking periodically for progress.
- Once fermented to your liking, transfer the jar to the refrigerator to slow down fermentation.
