Ingredients

  • 1 tablespoon kefir whey (optional)
  • Water (as needed)

Instructions

  1. Wash and slice the lemons into quarters, ensuring to keep the rinds intact.
  2. In a clean jar, layer the lemon slices with salt, packing them tightly.
  3. Add kefir whey if using, and enough water to ensure the lemons are submerged in their juices.
  4. Seal the jar and store it in a cool, dark place for 2-4 weeks, checking periodically for progress.
  5. Once fermented to your liking, transfer the jar to the refrigerator to slow down fermentation.
