Ingredients

- 1 cup all-purpose flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1 cup plain unsweetened kefir
- 1–2 eggs
- 1 tsp vanilla extract (optional)
- 2 tbsp sugar
- Butter for cooking
Instructions
- In a mixing bowl, combine the flour, baking powder, baking soda, and salt.
- In another bowl, whisk together the kefir, eggs, vanilla (if using), and sugar until well mixed.
- Pour the wet ingredients into the dry ingredients and stir gently until just combined (lumps are okay).
- Let the batter sit for 5-10 minutes.
- Heat a skillet over medium heat. Add a small amount of butter.
- Using a ladle, pour batter onto the skillet and cook until bubbles form on the surface, then flip and cook until golden brown.
- Serve warm with your choice of toppings such as maple syrup, fruit, or yogurt.
Notes
Do not overmix the batter for best results. Experiment with toppings like blueberries, nuts, or chocolate chips.
