Description

A delightful no-bake sweet treat that resembles small potatoes, made with cream cheese, coconut, and rolled in cinnamon for a festive St. Patrick’s Day treat.


Ingredients

  • 1 cup confectioners’ sugar (powdered sugar)
  • 8 oz cream cheese, softened
  • 1 cup desiccated coconut
  • 1 tsp vanilla extract (optional)
  • Cinnamon candy for rolling

Instructions

  1. In a large mixing bowl, blend the softened cream cheese and confectioners’ sugar until smooth.
  2. Mix in the desiccated coconut and vanilla extract, if using, until well combined.
