Description

A bubbly, slightly tangy homemade drink made from water, sugar, and water kefir grains, perfect for a healthy alternative to soda.


Ingredients

Scale
  • 4 cups filtered water
  • 1/4 cup white sugar
  • 23 tablespoons water kefir grains
  • Dried fruit or a slice of fresh lemon (optional)
  • A pinch of baking soda or a raisin (optional)

Instructions

  1. Mix four cups of filtered water with a quarter cup of sugar in a glass jar or pitcher.
  2. Stir until the sugar is dissolved.
  3. Add 2-3 tablespoons of water kefir grains.
  4. If desired, toss in a dried fig or a slice of lemon.
  5. Cover with a kitchen towel secured with a rubber band.
  6. Leave at room temperature for 24-48 hours, tasting occasionally to assess the tanginess.
  7. Once ready, strain the liquid into a clean bottle and refrigerate.
  8. Reuse the grains for the next batch.

Notes

Experiment with flavors by adding fruits like pineapple, strawberries, or blueberries during a second fermentation. Serve chilled or over ice for a refreshing drink.
