Description

A creamy, probiotic-rich vegan cheese spread made from cashews and kefir, infused with fresh herbs and spices.


Ingredients

Scale
  • 1 cup raw cashews
  • 1/2 cup kefir (dairy or water-based)
  • 1/2 tsp salt
  • 2 cloves garlic, minced
  • 1/4 cup fresh chives, chopped
  • 1/4 cup fresh parsley, chopped
  • Black pepper to taste

Instructions

  1. Soak cashews in water for at least 4 hours, then drain.
  2. Blend soaked cashews with kefir and salt until smooth.
  3. Transfer the mixture to a clean jar, cover loosely, and let it ferment at room temperature for 12-24 hours.
  4. After fermentation, stir in garlic, chives, parsley, and black pepper.
  5. If desired, drain through a cheesecloth-lined sieve for a firmer consistency.

Notes

Store in an airtight container in the refrigerator for 5-7 days. The flavor will deepen over time.
