A creamy, probiotic-rich vegan cheese spread made from cashews and kefir, infused with fresh herbs and spices.
Ingredients

- 1 cup raw cashews
- 1/2 cup kefir (dairy or water-based)
- 1/2 tsp salt
- 2 cloves garlic, minced
- 1/4 cup fresh chives, chopped
- 1/4 cup fresh parsley, chopped
- Black pepper to taste
Instructions
- Soak cashews in water for at least 4 hours, then drain.
- Blend soaked cashews with kefir and salt until smooth.
- Transfer the mixture to a clean jar, cover loosely, and let it ferment at room temperature for 12-24 hours.
- After fermentation, stir in garlic, chives, parsley, and black pepper.
- If desired, drain through a cheesecloth-lined sieve for a firmer consistency.
Notes
Store in an airtight container in the refrigerator for 5-7 days. The flavor will deepen over time.
