Description

Deliciously creamy and tender cookies infused with Irish cream, perfect for St. Patrick’s Day celebrations.


Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup sugar
  • 2 large eggs
  • 1 cup plain kefir
  • 1 cup Bailey’s Irish Cream
  • 3 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp vanilla extract
  • Optional: chocolate chips or chunks
  • Optional: powdered sugar for glaze

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, cream together softened butter and sugar until light and fluffy.
  3. Add eggs, kefir, and Bailey’s Irish Cream, mixing until well combined.
  4. In another bowl, whisk together flour, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. If desired, fold in chocolate chips.
  7. Chill the dough in the fridge for 30 minutes.
  8. Drop cookie dough onto a baking sheet, leaving space between each cookie.
  9. Bake for 10-12 minutes or until lightly golden.
  10. Let cool on the baking sheet for 5 minutes before transferring to a wire rack.

Notes

For added flavor, drizzle with a glaze made from powdered sugar and Bailey’s. These cookies can be frozen for longer storage.
