Deliciously creamy and tender cookies infused with Irish cream, perfect for St. Patrick’s Day celebrations.

- 1 cup unsalted butter, softened
- 1 cup sugar
- 2 large eggs
- 1 cup plain kefir
- 1 cup Bailey’s Irish Cream
- 3 cups all-purpose flour
- 1 tsp baking soda
- 1/2 tsp salt
- 1 tsp vanilla extract
- Optional: chocolate chips or chunks
- Optional: powdered sugar for glaze
Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, cream together softened butter and sugar until light and fluffy.
- Add eggs, kefir, and Bailey’s Irish Cream, mixing until well combined.
- In another bowl, whisk together flour, baking soda, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- If desired, fold in chocolate chips.
- Chill the dough in the fridge for 30 minutes.
- Drop cookie dough onto a baking sheet, leaving space between each cookie.
- Bake for 10-12 minutes or until lightly golden.
- Let cool on the baking sheet for 5 minutes before transferring to a wire rack.
Notes
For added flavor, drizzle with a glaze made from powdered sugar and Bailey’s. These cookies can be frozen for longer storage.
