Description

A light and moist sheet cake made with kefir, offering a tender crumb and a burst of flavor, ideal for various occasions.


Ingredients

  • 1 cup plain whole milk kefir
  • 1 cup sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs, at room temperature
  • 1 1/2 cups all-purpose flour
  • 1/2 cup cake flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a sheet pan.
  2. In a bowl, cream together the butter and sugar until light and fluffy.
  3. Add the eggs one at a time, mixing well after each addition.
  4. Mix in the kefir and vanilla extract until combined.
  5. In another bowl, sift together the all-purpose flour, cake flour, baking powder, baking soda, and salt.
  6. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  7. Pour the batter into the prepared sheet pan and spread evenly.
  8. Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
  9. Let the cake cool in the pan for 10-15 minutes before transferring to a wire rack to cool completely.
