- 1 cup plain whole milk kefir
- 1 cup sugar
- 1/2 cup unsalted butter, softened
- 2 large eggs, at room temperature
- 1 1/2 cups all-purpose flour
- 1/2 cup cake flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1 teaspoon vanilla extract
- Pinch of salt
Instructions
- Preheat the oven to 350°F (175°C) and grease a sheet pan.
- In a bowl, cream together the butter and sugar until light and fluffy.
- Add the eggs one at a time, mixing well after each addition.
- Mix in the kefir and vanilla extract until combined.
- In another bowl, sift together the all-purpose flour, cake flour, baking powder, baking soda, and salt.
- Gradually add the dry ingredients to the wet mixture, mixing until just combined.
- Pour the batter into the prepared sheet pan and spread evenly.
- Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
- Let the cake cool in the pan for 10-15 minutes before transferring to a wire rack to cool completely.
